I ran a food blog called Make It With Missy for years, and I miss it.

Recently, some friends asked me for gluten-free recipes, so I dug up some of my old content. I got rid of my blog during a stressful custody battle, but thanks to Wayback Machine, I’ve been able to find the recipes I forgot to save.

Back in the day, my readers loved cauliflower. That’s why I’m starting with a recipe that features this fiber-filled veggie. I hope you guys love this cilantro lime cauliflower rice along with my other cauliflower recipes that I’ll be uploading soon.

Before we talk about my recipe, I just want you to know that you can sneak in 77% of the daily RDA for vitamin C with just 1 serving of raw cauliflower. Pretty impressive, especially if your body can’t tolerate citrus fruits very well or you’re trying to reduce the amount of fruit you consume.

Cauliflower also has choline, which is good for your brain, and tons of other nutrients, including beta-carotene, vitamin B6, and potassium. It’s a great source of protein for vegans and vegetarians, and you can use it to replace ingredients like rice, quinoa, cheese, and potatoes in healthy…
